Dendeng Balado is a typical cuisine of West Sumatra made from thin slices of widening meat, then the beef is dried and then fried. Then this Dendeng is stirred with red lado (red chili).
Where as Dendeng Lambok has the same ingredients as Dendeng Balado, the difference is only in the Lado / chili, not using red chili, but using coarsely sliced green chili. Thinly sliced beef is widened and then beaten with a mortar to make the meat tender.
Dendeng Balado adalah masakan khas Sumatera Barat yang dibuat dari irisan daging tipis yang melebar, kemudian daging sapi tersebut dikeringkan lalu digoreng. Kemudian Dendeng ini diaduk dengan lado merah (cabai merah).
Sedangkan Dendeng Lambok bahannya sama dengan Dendeng Balado, bedanya hanya terletak di lado / cabainya, bukan memakai cabai merah, namun memakai cabai hijau yang diiris kasar. Daging sapi yang telah diiris tipis melebar lalu dipukul-pukul dengan batu cobek supaya dagingnya menjadi lembut.
